Corn Freezing Party

Today, while Larry and his helpers were working in the piano shop, Sandra, Doreen and Steve had a corn freezing party. It reminded me of the food preparation my Mom and aunts use to do together canning peaches, cherries and freezing strawberries, corn etc. . . Today they managed to process 16 dozen ears of corn and are freezing about 60 quarts. Lots of work but also a lot of good eating.

This is truely a fading art. I hope our (Doreen and mine) generation can keep it going. It might become a necessity some day the way the world is going.

If corn is something that is going to be a yearly thing at your house you need to get a corn knife. There are a couple of different kinds but it rips that corn off the cobb so fast it really speeds up the job. They are really inexpensive and REALLY neat. We do ours in the garage since I have that stove out there. But then we do them by the box. There are 4 dozen to the box. I know we brag about Olathe sweet corn but there are a lot of good tasting corns out there. You guys did a really good job. I am so proud of all the food preserving that you all are doing. Keep up the good work. Mom
